Who You Are
You live and breathe service. You thrive on the floor, shoulder-to-shoulder with your team, guiding guests through a wine experience that is warm, welcoming, and grounded in quality. You’re passionate about low-intervention wines, and you have a deep understanding of Italian terroir, producers, and vintages.
You believe in relationships — with suppliers, with winemakers, and most importantly with our guests.

What You’ll Do
Lead and evolve our wine program across the restaurant, café, and wine bar
Build and maintain a focused, low-intervention wine list with Italian producers at its core
Be present on the floor: guide guests, train staff, and be a leader in service
Work with the Kitchen, restaurant manager and GM, to shape menus, pairings, and events.
Cultivate strong relationships with our current wine suppliers — and seek out new ones.
Handle ordering, stock, cost control and cellar management.
What We’re Looking For
Proven experience as a head sommelier, ideally with multiple outlets.
A deep knowledge and passion of Italian wines, especially from low-intervention producers
Strong presence in service — you enjoy the floor and working closely with your team
Organizational skills and a clear understanding of wine cost, margins, and ordering
A collaborative mindset — you're a team player with leadership experience

Every element on the plate is carefully considered: we use milk from Danish Jersey cows to produce fresh mozzarella, burrata, and stracciatella daily in our in-house micro-dairy. Our charcuterie is made upstairs from the restaurant, using pork from some of Denmark’s most respected organic farms.
