  • Mirabelle is an everyday, casual eatery on a sunny corner in the heart of Nørrebro — a place shaped by the scent of freshly baked sourdough bread, honest and nourishing food, and the rhythm of the Danish seasons. Our bakery is at the core of this atmosphere. It supplies the bread that carries our menus and creates the warm morning mood that drifts through the room from 7:30am and into the evening.

    We are now looking for an experienced sourdough baker to join our team.

    About the Bakery

    Mirabelle Bakery is a small, focused sourdough bakery working with Danish organic flour, long fermentation, and careful craftsmanship. Alongside our bread production, we create a curated selection of pastries inspired by the Danish seasons — using local fruits and berries, and balancing them with classic, simple techniques.

    The bakery is closely connected to the life of the restaurant and its two kitchens (Mirabelle & BÆST), which means your work will be part of a lively, collaborative atmosphere shaped by cooks, bakers, pizzaiolos cheesemaking, and charcuterie production from our micro-dairy and micro-salumeria upstairs.

    We are looking for someone who:

    • Has solid experience with sourdough baking and naturally fermented bread

    • Cares deeply about good grains and flour, fermentation, and consistent quality

    • Works confidently and independently, and can take responsibility for daily production

    • Is motivated by working in a busy house with two restaurants and many moving parts

    • Enjoys developing pastries that follow the Danish seasons, and can bring ideas to life

    • Values craftsmanship, responsibility, and a respectful approach to ingredients

    Your role includes: 

    • Daily sourdough bread production (mixing, shaping, baking)

    • Developing and producing seasonal pastries

    • Working with Danish organic flour and long fermentation processes

    • Maintaining high standards in consistency, quality, and kitchen hygiene

    • Collaborating with the restaurant teams throughout the day

Our charcuterie is made upstairs from the restaurant, using pork from some of Denmark’s most respected organic farms.
